Rare Bird Vanilla Spiced Gin

This is the third edition of the Rare Bird Gin. Following distillation vanilla pods, cloves, ginger root and star anise and allspice are macerated in the gin for 5 days. This produces a gin with a rich, soft spice flavour with a burnt amber colour.
 
Treat this much as you would a rum or a whisky, drink it neat or add sparkling wine for a French 75 cocktail.
